Starting one’s own business is a difficult endeavor. It is particularly risky if one is unable to conduct due diligence prior to committing to the new enterprise. Food Booth, The Entrepreneur's Complete Guide to the Food Concession Business, provides a simple-yet comprehensive guide for the food concession business start-up where previously none existed. Prior to its publication, information needed to increase one’s odds of success in the food concession business was unavailable. No book has been written on the subject, no government statistics have been kept, nor have trade associations been established to offer the new concessionaire access to regulatory requirements, how-to information or vital support. For the food concession start-up, this fact in itself makes the publication of this book key. It opens the doors to what may seem a secret society.

Beyond the rarity of the book’s subject, Fitzgerald does a good job walking the reader through each detail of starting a concession business. Early in the book, by considering and addressing the reader’s personal limitations-a subject rarely addressed in other business start-up guides, the author conveys respect and establishes trust. The fourteen informative chapters of Food Booth are divided into four parts. Each section addresses in intricate detail a stage in the start-up process. Throughout the book sidebars and drop quotes offer helpful tidbits of inside information gleaned from the author’s personal experience. Over one hundred black and white photographs illustrating food booths in operation, example forms and applications, and formulas for calculating profitability provide the reader with logistical insight. The author spells out the many planning and design decisions the reader will encounter, and then outlines the pros and cons of each option.

Fitzgerald made a success of her concession business after learning the ropes by trial and error.
